DATE NUT BANANA BREAD
Because even if you told yourself you wouldn’t make banana bread again after quarantine, this one is just too good to pass up! 💯🙌🏼 This loaf is moist, warmly spiced, and naturally sweetened with bursts of caramelised dates and toasty walnuts! Not to mention it makes the house smell like an absolute DREAM 😍 vegan, oil free and sugar free!
Ingredients

1c spelt flour

3/4c oat flour

1/2c chopped walnuts

1/2c soft pitted dates (finely chopped)

1/4c shredded coconut

💙 1/4c @puresweetofficial Mayple syrup

2tbsp almond milk

1 flax egg*
-
1c ripe mashed bananas

1tsp baking powder
-
1tsp baking soda
-
1tsp cinnamon
- 1/4tsp salt
Instructions

Preheat oven to 350F and line a loaf pan

For flax egg, combine 1tbsp flaxseed + 2.5tbsp water. Set aside 5mins to “gel”

In a large bowl, mash bananas and then add in all wet ingredients

In another bowl, combine all dry ingredients except dates and walnuts

Add dry to wet and stir till combined.

Fold in dates and walnuts

Transfer batter to prepared loaf pan and top with additional dates/walnuts. Bake for 40-45mins until lightly golden
- Let cool completely before slicing and devouring!
